The night before you want to cook the noodles, peel and boil the potatoes. Set in the refrigerator over night. The next day, peel and grate the potatoes. Add the flour to the potatoes, season with a little salt and knead. Roll out and cut into 1 cm stripes. Place in a large pot of boiling water. When the noodles rise to the top they are ready to drain, usually about 1 minute.
