- Penne - 200g [penne
- Yellow Zucchini - 2 (thumb size)
- Striped Zucchini - 2 (thumb size)
- Smoked Bacon - 100g
- Egg Yolk - 2
- Cream - 1/2 oz
- Parmesan -
- Olive Oil -
- Salt -
- Ground Black Pepper - freshly
- Thyme - a few sprigs of
Boil the penne in salted water.
Add the bacon fat, olive oil, and zucchini to a frying pan. Season with salt, pepper, and thyme to taste. Remove from heat once the zucchini is soft.
Blend the egg yolk with the cream and around 1 handful of parmesan.
Mix the zucchini with the cream mixture and pour over the pasta. Blend well then sprinkle with parmesan. serve hot.
