Stuffed Peppers

Ingredients:
- Green Pepper - 12 medium
- Rice - 250 g (0.6 lbs)
- Canned Minced Pork - 400 g (0.9 lbs)
- Salt -
- Pepper -
- Spice -
- Red Pepper -
- Garlic -
- Tomato Paste - 3 ounces
- Red Onion - 1 large
- Oil -
Instructions:
Chop the onion and place in a large amount of oil. Fry until the onion has a glassy look. Remove from heat and sprinkle with paprika.
Clean the rice and place in a large container.
Open the can of minced pork and be sure that it is in small pieces. Add to the rice.
Now add the onions along with the oil.
Salt and pepper to taste.
Clean the peppers and cut off the tops. Remove the seeds.
Fill the peppers with the filling almost to the top but leave some room as the rice will swell as it cooks.
In a large, add the peppers. Add water but do not allow the water to cover the top of the peppers just about half way up on the peppers.
Simmer. When the peppers begin to lighten in color add tomato paste to the water and gently stir. Cook until the rice is tender.
