- Cauliflower - 1
- Rice - 1/2 cup of
- Oil - 1 tbs
- Bacon - 200g sliced or chopped
- Onion - 1
- Garlic - 1 clove of
- Parsley - 1 bunch of
- Sour Cream - 1 small cup of
- Egg - 1
- Bread Crumb - 1 tbs
- Salt -
- Edam Cheese - 50g smoked (plain is fine)
Clean the cauliflower, cut in half cook in lightly salted water, drain.
Wash the rice cook in salted water, rinse, drain.
Cut the bacon into small pieces and fry. Add the onions and fry until
bacon is browned and the onion is glassy, add the crushed garlic and parsley. Remove from the heat.
Chop the cauliflower into bite size pieces and place half in a baking pan. Sprinkle with bread crumbs. Add half of the bacon on top of the cauliflower. Sprinkle the rice on top. Then place the remaining cauliflower.
Mix the sour with the eggs and pour over the cauliflower. Sprinkle the top with grated cheese.
Bake in preheated oven until browned.
