- Chestnut - 1000 g (2.2 lbs)
- Water - 2 cup
- Milk - 1.5 cup
- Sugar - ¼ cup
- Vanilla Pod - 1
- Salt - ½ tsp
- Butter - 50 g (0.1 lbs)
- Cream - ¾ cup
- Rum - 1-2 tsp
- Whipped Cream -
Using a sharp knife cut an “x” on the rounded side of each chestnut shell. Sprinkle the chestnuts with some water and place them into a preheated oven. Bake them for about 45 minutes.
Once peeled, place the chestnuts in a pan. Add 1 1/2 cups of water, 1 ½ cup of milk, the seeds from the vanilla pod and some rum. Cook on low heat for about 40 minutes until they become soft.
Make the sugar syrup by mixing 0.1 liter of water with 50 g of sugar and cook for a few minutes. Add the sugar syrup, salt, melted butter, cream, and some rum. Puree it in a mixer.
Run the puree through a potato-press. Put it into a bowl and cover with whipped cream.
