Pour the water, sugar and salt in a mixing bowl and stir. Add the three types of flour.
If you have a bread making machine, select the dough program. If not, knead by hand, then leave to rest in a warm place for 1 hour.
Either way, make the dough, divide it into 4-6 pieces, depending on how many baguettes you want to make.
Turn the shaped baguette in the mixed seeds and place on floured tray. Leave the baguettes to rest for another 30 minutes.
