Can't imagine a dinner without tender beets!
- Celery - 1/2
- Beet - 1 small tender
- Apple - 1 medium
- Walnut - 1 handful of
- Coconut Milk - 0.2 l cream, or (6.8 oz)
- Cream - 0.2 l (6.8 oz)
- Mustard - 1 tsp
- Salt -
- Pepper -
- Lemon Juice - 1 tbs
Grate the celery, salt and allowed to stand for a few minutes.
Grate the beets, sprinkle with lemon juice (so the beautiful vibrant colors come to life), and dice the apple.
Prepare the sauce by mixing the remaining ingredients together. Gently toss the chopped ingredients in the sauce.
