Greek Salad With Herbed Watermelon

Ingredients:
- Watermelon - 500 g diced (1.1 lbs)
- Feta Cheese - 100 g (0.2 lbs)
- Onion - 2 red
- Lemon Juice - 1.5 and [zest]
- Mint - 1 handful of fresh
- Lemon Balm - half-handful of fresh
- Parsley - Half handful
- Basil - half-handful of fresh
- Cilantro - 1-2 sprigs of fresh
- Pumpkin Seed Oil - 1 tbs or
- Extra Virgin Olive Oil -
- Salt -
- Black Pepper - freshly ground
Instructions:
Remove the watermelon from the rind and cut into cubes. Cut the Feta in cubes. Wash the herbs and chop together. In a large bowl, add the herbs, feta cheese, and watermelon. Salt and pepper. Cut the onion into very thin half-rings and salt well. Add the lemon zest and lemon juice. Marinate for at least 30 minutes. Sprinkle with pumpkin seed oil.
