- Zucchini - 6 small
- Penne - 200 g (0.4 lbs)
- Bacon - 100 g (0.2 lbs)
- Egg Yolk - 2
- Cream - 0.75 dl (2.5 oz)
- Parmesan - 50 g grated (0.1 lbs)
- Thyme - 1 bunch fresh
- Salt -
- Pepper -
- Olive Oil -
Cut the bacon into strips.
Cut the zucchini in half, then cut into slices.
Start to cook the pasta in boiling water.
Place a little olive oil in a pan and fry the bacon. Add the zucchini, season with salt and pepper.
Now prepare the sauce: Mix the egg yolks with the cream, half the Parmesan, salt, pepper and mix thoroughly.
Meanwhile, add the thyme to the zucchini and stir.
When ready, pour the zucchini into the sauce and boil, then remove from the heat.
Slowly stir the sauce and add to the pasta.
Serve immediately sprinkled with the remaining Parmesan.
