Chicken With Pineapple-soy Sauce

Ingredients:
- Chicken Breast - 1 whole
- Pineapple - 1 can diced
- Corn - 200 g (0.4 lbs)
- Garlic - 1 head
- Salt -
- Pepper -
- Soy Sauce - 3 tbs
- Cream - 150 ml (5.1 oz)
- Pineapple Juice -
- Ginger - 1 tsp ground
- Cinnamon - 2 pinches
- Cayenne Pepper - 1 pinch
- Cardamom - ground
- Coconut Oil - 2 tsp
- Cheese - Top with grated
Instructions:
Clean and then cut the chicken breast into cubes. Drain the pineapples and set the juice aside. Cut the onion into rings.
For the marinade mix the soy sauce, cream, and pineapple juice, season with pepper, ginger, cayenne pepper and cardamom. Place chicken in the marinate for at least 20 minutes.
Cook the onion with the coconut oil just until the onion is soft, then add the corn and pineapples. Season with salt and pepper. Boil for five minutes. Remove the chicken from the marinate and fry in the coconut oil on both sides for a few minutes.
Finally, the soy sauce: boil until it thickens to a creamy sauce. Pile the meat on a plate, next to the pineapple. Pour the sauce over the dish and sprinkle the top with grated cheese.
