Slice the tomatoes, peppers, cucumbers and the onion into thin slices.
Layer in a bowl, season lightly with salt and pepper.
Meanwhile, we make the juice. Mix the vinegar with the water and sugar.
Let sit for about 15 minutes, pour over the salad, then sprinkle with parsley.
Gently rotate together and then sprinkle olive oil on top.
