Refreshing fish salad.
- Rocket Leaf - 50 g (0.1 lbs)
- Chopped Fresh Parsley Leaf - 2 tbsp
- Onion - 2
- Avocado - 2
- Lemon Juice - 1 tbsp
- Smoked Salmon - 250 g (0.6 lbs)
- Lime Wedge - 4-5
- Mayonnaise - 150 ml (5.1 oz)
- Lime Juice - 2 tbsp
- Grated Lime Rind - 1 tbsp
- Sesame Seed - 1 tbsp
Tear up the salad and arrange in 4 bowls or on 4 plates. Sprinkle over the chopped parsley and spring onions.
Peel and chop the avocados and brush with the lemon juice. Divide between the salad plates and mix together. Slice the salmon and place over the top of the salad. Sprinkle sesame seeds.
Pour the mayonnaise in a bowl, then add lime juice, rind and chopped parsley. Spoon the mixture on top of each salad, sprinkle with parsley leaves and serve with lime slices.
