A sweat-smoky rub gives the salmon a special taste. Spinach leaves are a good source of vitamins, especially vitamin K.
- Oil - 4-5 tbs
- Lemon Juice - 3 tbs
- Smoked Paprika - 1 tbs
- Chopped Fresh Parsley - 2 tbs
- Chopped Fresh Dill - 2 tbs
- Salt And Pepper - to taste
- Salmon Fillet - 500 g (1.1 lbs)
- Baby Spinach Leave - 100 g (0.2 lbs)
- Orange Slices - 2-3
Place the oil in a small bowl with the lemon juice and season with salt and pepper. Stir together well. Rinse the fish under cold running water, then pat dry with kitchen paper. Arrange the fish in a shallow ovenproof dish.
Rub top of salmon evenly with smoked paprika mixture. Roast in a preheated oven, 200 °C/400 °F for ten minutes, or until the fish is cooked through.
Cook the spinach in oil for 2-3 minutes, until it is wilted. Arrange the cooked spinach on serving plates. Serve the salmon over spinach leaves and garnish with orange slices.
