- Ground Ginger -
- Grated Ginger -

- Lemon -
- Lettuce -

If the whitebait fish is frozen allow to dethaw at room temperature.
Mix the ground ginger, a little salt, add fresh grated ginger, flour and lemon. Roll the fish in the mixture and then fry in heated oil until golden brown. Make the salad with the remainder of the ingredients and serve along side the fish.
