Creamy, golden brown mashed potatoes make this dish filling and tasty.
- Floury Potato - 900 g (2 lbs)
- Milk - ½ cup
- Butter - 55 g (0.1 lbs)
- Salt And Pepper - to taste
- Cod Fillet - 4-5
- Oil - 1 tbs
- Finely Chopped Garlic - 4 cloves
- Chopped Fresh Parsley - 2 tbs
Cut the potatoes into chunks and cook in a medium saucepan of salted water for 15 minutes, or until tender. Drain well, and mash in the pan until smooth. Set over a low heat and beat in the milk, butter, salt and pepper.
Place the cod fillets in a roasting tin and brush the fish with the oil. Sprinkle the garlic on top, add salt and pepper to taste, then spread with the mashed potatoes.
Roast in a preheated oven, 230 °C/450 °F, for 8-10 minutes, or until the fish is just tender.
Meanwhile, preheat the grill. Transfer the fish to the grill and cook for about 2 minutes, or until golden brown. Sprinkle with the chopped parsley and serve immediately.
