Peel the artichokes down to the heart. Cut out the hairs, cut into eight pieces and squeeze the lemon into the water and put in the artichoke pieces.
Cut the onion into small pieces and fry in heated olive oil for 1-2 minutes, then put the artichoke pieces in, the chopped olives and also chopped capers. Season with salt and pepper to taste.
Then add 8-10 tbs of lemon water, cover the pan and begin to steam the artichokes. Be sure to keep an eye on the water and do not let it go dry. Completed in 15-20 minutes.
When the artichoke is soft, put on plate, and sprinkle with chopped parsley before serving.
