Wash all the vegetables. Slice the peppers, chop the tomatoes, peel and chop onions.
Pour olive oil in a pan, sauté the onions until glassy.
add the sliced peppers and continue sautéing.
Press the garlic and then add tomatoes, garlic and spices to the onions and peppers. Add water as needed. Cook on low heat without a lid several minutes until ready. Taste and add more spices if needed.
