Chop the onion and place in a little oil in a frying pan along with the garlic and sauté.
Meanwhile, cut the peppers and tomatoes. When the onions are glassy, add the peppers and tomatoes.
When you notice a bit of sauce being created add the seasonings.
When all vegetables are cooked, beat the eggs, season with salt and pepper and add to the vegetables.
Meanwhile, fry the potato strips.
