Serving it over rice and asparagus makes for a deliciously unified and substantial meal.
- Chicken Breast - 2
- Salt - to taste
- Ground Black Pepper - 1 pinch
- Swiss Cheese - 4 slices
- Prosciutto Or Ham - 4 slices
- Flour - 1 cup
- Seasoning Salt - 1 tbs
- Egg - 2
- Milk - 2 tbs
- Dried Breadcrumbs - 1 cup
- Olive Oil - 3 tbs
Cut chicken breasts in halves horizontally. Pound them into half-inch thickness. Place a cheese and ham slice on each breast within 1/2 inch of the edges. Fold the edges of the chicken over the filling, and secure with toothpicks. Mix the flour with seasoning salt and black pepper and coat the chicken pieces.
Beat the eggs and mix them with seasoning salt. Add seasoning salt to the breadcrumbs. Dip the chicken rolls in the egg mixture and coat in the breadcrumbs.
Bake them in olive oil for about 20 minutes until cooked through. Serve warm.
